Scalloped Cauliflower & Ham, 1/365

I have decided  to make a commitment to my blog, even if it means just posting a lone photo.  I hope to post at the most, once per day, we’ll see if this lasts, but it’s worth a shot! Today I have three days of the New Year ready to share with you.  This one will be 1/365.

Leftover holiday ham is just perfect in scalloped potatoes, but if you’re avoiding high starch vegetables, dairy and grain, traditional scalloped potatoes are a thing of the past.  This recipe is a satisfying, low carb/starch, dairy free,  grain free alternative.

Scalloped Cauliflower & Ham

1 head cauliflower

2 cups of cubed ham

1 1/2 tablespoons butter, ghee, lard or coconut oil

2 tablespoons finely chopped onion

2 1/2 teaspoons arrowroot powder

1/2 teaspoon sea salt

1/8 teaspoon fresh ground pepper

1 cup homemade chicken or other stock

Heat oven to 350º.  Prepare the cauliflower by separating into flowerets an then slicing each floweret thinly as shown in the photo.  Spread in a small baking dish and lightly toss with chopped ham.

Melt fat in a saucepan over medium heat.  Add onion and cook until tender.  Stir in arrowroot, salt and pepper.  Cook until smooth and bubbly.  Remove from heat.  Stir in broth.  Place back on heat and stir until thickened, about 7 minutes.  Pour over cauliflower and ham mixture.

Bake fro 30 minutes or until cauliflower is tender but not mushy.  Let stand 5 minutes before serving.
