Looking Forward to Sunnier Weather & Pico de Gallo

Snow again, ugg! But the sun is still shining, reminding me spring is on the way, and on its heels summer!!! So in honor of upcoming sunny days, here is a summer recipe. You could make it now, but if you try to eat local and in season, you’ll be waiting until summer (which is when I took the below photos), when tomatoes taste best!
I don’t add any chiles to mine, but if you want a little kick you can add two chiles of your choice, seeded and chopped.
Pico De Gallo
2 cups seeded and chopped red tomato, preferrably organic, or even better, homegrown
2 thinly sliced green onions
1 finely chopped red onion
1 tablespoon finely chopped fresh cilantro
2 tablespoons lime juice
Sea salt & freshly ground pepper
Mix tomatoes, onions, cilantro and lime juice. Salt & pepper to taste.
