Pears, Glorious Pears!

After sitting the pears that Peter brought home in the window to ripen a little more, it was time to use them.  Here is my first pear recipe used this year, its a yearly favorite and goes great with strong coffee!

Walnut Pear Sour Cream Cake

makes 9” round cake

1 cup broken walnuts

1/3 cup brown sugar

1 teaspoon cinnamon

1/4 cup butter

1/3 cup flour

2 medium pears, peeled, cored and sliced

2 teaspoons lemon juice

1 3/4 cup flour

3/4 teaspoon baking powder

1/2 teaspoon soda

1/4 teaspoon salt

1/2 cup butter, softened

1 cup sugar 1 teaspoon vanilla

2 eggs

8 oz. sour cream


Preheat oven to 350º.  Grease 9” spring form pan.  Combine 1 cup nuts, brown sugar and cinnamon.  For topping, cut 1/4 cup butter in 1/3 cup flour to make coarse crumbs.  Combine with 3/4 cup nut mixture.  Set aside remaining nut mixture and topping.  Toss pears with lemon juice; set aside.  In medium bowl combine flour, baking powder, baking soda and salt.  In large bowl beat 1/2 cup butter for 30 seconds.  Beat in sugar and vanilla.  Add eggs, one at a time, beating well after each addition.  Add flour mixture and sour cream alternately to batter.  Beat on low speed after each addition until combined. Spread 2/3 batter in pan.  Layer pears and reserved nut mixture.  Spread with remaining batter; sprinkle with topping.  Bake 55 minutes or until toothpick comes out clean.  Cool 10 minutes in pan.  Remove sides; cool 1 hour.
